Most of us think hydration means drinking more water. Dr. Gerald Pollack, Professor of Bioengineering at the University of Washington, argues that this misses the bigger question: What is the state of water inside our cells and how do we harness it for energy?

His research suggests water next to biological surfaces behaves differently from water in a glass. He calls it EZ water. It excludes certain particles, carries electrical charge, is more gel-like than liquid, and can act like a battery giving us energy.

Dr. Pollack thinks healthy cells are largely filled with this EZ water. When cells lose it, they lose function. He thinks severe loss may be part of cancer.

Given the special properties of water, hydrating our cells is not merely about drinking more water. It requires a proper understanding of the properties of cellular water, and what stimulates it. So the most important question is: How does cellular water work and how best to hydrate our cells?
